Hummus is such an easy and healthy snack and goes well with both tortilla chips and fresh cut up veggies. We are serving it here with yellow bell peppers and fried plantain chips. Yep, a winner in the school lunch crowd.
Here is the recipe for the hummus if you feel like making it the night before. But if you want a faster version, buy store bought and blend it with cooked beets. However, home made is always best.
2 cups organic cooked chick peas
2 TB organic tahini paste
3 cloves garlic
1/2 tsp cumin
Juice of one lemon
sea salt to taste
1/2 cup 100 percent pure avocado oil or as needed for smooth creamy texture
1/2 cup cooked beets
Add all ingredients to the blender and blend until creamy and smooth.
In the Snack box: coconut strips and frozen raspberries. Easy peasy, lunch is ready!
