Why You’ll Love This Recipe

  • Quick and Simple: Whip up a flavorful sauce in just 5 minutes!
  • Customizable Heat Level: Adjust the spice to suit your taste.
  • Versatile: Perfect as a dip, drizzle, or spread for countless dishes.

Ingredients

  • 1–6 tablespoons diced chipotles in adobo (adjust for spice level)
  • ¾ cup sour cream (or Mexican crema)
  • ¼ cup mayonnaise (or vegan mayo for dairy-free)
  • ¼ cup chopped cilantro (optional)
  • 3 tablespoons lime juice (fresh is best!)
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • 1 clove garlic
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Blend Ingredients:
Add all ingredients to a high-speed blender or food processor.
  2. Blend Until Smooth:
Blend until the sauce is creamy and smooth.
  3. Taste and Adjust:
Season with salt and pepper to taste. Adjust spice levels as needed by adding more chipotles or balancing with extra sour cream.
  4. Serve and Enjoy:
Use immediately or store for later. Perfect with tacos, roasted veggies, or as a dip!

Tips for Success

  • Control the Heat:
    • Very Spicy: 6+ tablespoons of chipotles
    • Mild: 1 tablespoon or less
  • Blender Options: A high-speed blender works best, but a food processor or immersion blender will do.
  • Too Spicy? Add more sour cream or mayo to tone it down. A touch of honey or maple syrup can also help balance flavors.
  • Extra Zing: For added sweetness, try a small drizzle of honey.

This versatile chipotle sauce pairs perfectly with:

  • Quesadillas
  • Burgers
